Morning Glory restaurant Hoi An Vietnam

There is a tray of condiment bowls are appear in front of us. They are filled with many ingredients of spices – some familiar, many exotic and colorful. The teacher - Chef Ms. Vy explains, one by one, how each of the vegetables and herbs are used for creating Vietnamese or ‘street food’ cuisine every day. But for Westerners, it should be the great chance for a gourmet to experience the palate, it make the inspirational because we are learning the art of cooking it for ourselves.


The Morning Glory was the first cooking school in Hoi An, it has garnered a well-deserved reputation over the years for its classes. The owner and founder - Ms Trinh Diem Vy is a third generation chef of Hoi An, whose cooking classes have featured in various publications around the world. A highly individual passionate, Ms Vy has created six cooking class programs to suit all the types of interested gastronomes; from beginner, to amateur, to professional

Ms Vy’s zeal for recreating street food favorite in the Morning Glory cooking school and restaurant is driven by a personal desire to keep local recipes alive.


“Street food recipes are passed on from ancestor generation to the later generation. In the case there is not family member to carry on the tradition, the recipes are lost. So I wish to recreate and teach dishes in Morning Glory that will keep the street food experience alive, especially foods which are special to Hoi An” she said.
